This quesillo was originated in the Valles Centrales de Oaxaca, and it's considered a variation of white cheese. The tale tells that there was a girl called Leobarda, who got distracted when she was curdling the cheese. To not be grounded by her mother, she added more water.
Thanks to Leobarda we have this amazing quesillo, which has become one of the most loved ones in Mexico.
