This recipe is perfect for anyone who wants to prepare a healthy, vegetarian meal at home that, above all, increases their energy levels.
Ingredients
For the crunchy quinoa
100 grams white quinoa
100 grams red quinoa
1 onion, finely chopped
10 grams mascarpone
20 grams grated parmesan cheese
Salt and pepper to taste
For the yogurt and herb sauce
50 grams fat-free Greek yogurt
2 sprigs each of cilantro, dill, tarragon and parsley
Salt and pepper to taste
Preparation:
Preheat your oven to 180°C Combine the white and red quinoa, then spread evenly on a baking sheet.
Pour enough water to cover the quinoa by about 3 centimeters
Add the finely chopped onion to the quinoa mixture
Bake for an hour or until all the water is absorbed
Heat a little olive oil in a pan to 140°C and fry a third of the quinoa cooked until crispy.
In a separate pan, mix the rest of the quinoa with the mascarpone, parmesan, salt and pepper.
For the sauce, chop the herbs, discarding the stems. Mix them with the yogurt Greek and season to taste
To serve your muesli like a pro:
Start with a big spoonful of yogurt and herb sauce on the bottom of your plate.
