Founded by Concepción Cervantes y Eguiluz, affectionately known as Doña Conchita, the El Tizoncito taqueria has left an indelible mark in the heart of every person who has had the pleasure of tasting the extraordinary cuisine and seasoning that has been passed down from generation to generation. A legacy that began with the creation of the famous al pastor tacos on February 2.
This story begins in 1966 when Doña Conchita, a widowed mother, bought carne asada tacos at the local taco shop to take food to her children.

Thanks to his extensive knowledge of home cooking, he saw a great opportunity to give it a new twist and try something different on the table, without knowing that his idea would revolutionize the culinary world. This new creation gave a flavor twist to an already classic Mexican dish, it was the moment when the taco al pastor was born.
Without professional knowledge in the kitchen and only trusting in her seasoning, Doña Conchita created a mixture of adobo with achiote, pepper, chili peppers and other condiments, thus giving an exquisite flavor to the preparation.
There was no school, but there was technique and a lot of love for tacos, so she decided to use pork to give a unique flavor to the stew that would rest in smaller tortillas than usual to offer a delicious taco.
As time went by and inspired by his children playing with his wooden top, he decided to implement a vertical and rotating cooking technique based on charcoal, where the meat was placed one on top of the other to create a top shape, completed with the unique flavor of pineapple and onion.
Seeing the great success that this exquisite preparation had with his family, the idea arose to share it with his neighbors, and later, to undertake with enthusiasm and hope this culinary project that was called El Tizoncito.
